The street-food standard

Standard class

The common street-food configuration: one hot line under extraction, cold storage, and a service window sized for a queue.

About the standard class

A coffee unit looks simple and is easy to underestimate. The heat load is low and the extraction is minimal, so the trailer can be small and light. The electrical load is not minimal: a two-group machine and a grinder sit around five kilowatts before anything else is on.

Water is the other constraint. Espresso equipment needs treated water, hot water for cleaning, and enough fresh and waste capacity to trade a full day without a fill.
